This is a response video to TakeSomeAdvice who makes a subtle claim that you can’t achieve a decent head and lace from a can of Cooper’s malt extract. Clearly, from this video, a properly brewed home brew kit can produce great results, including head retention and lace. The question is, do these things really tell the story about how good the beer is? We brew beer, malt extract and home brew worts in the same way. All worts are boiled and produce hot break, which is then removed in the whirlpool. Rather than being cooled down for fermentation, the malt extract and home brew worts are centrifuged and transferred to evaporators where all but around 20% of the water is removed. At this stage the malt extract and home brew is packaged then cools down but does not throw cold break material because the extract is too dense for it to precipitate. Once you add water, the wort becomes thin enough for the break material to precipitate. This break material is completely harmless to the brew and will settle out during fermentation. If boiled the break material may clump together giving the impression, incorrectly, that it is hot break. Boiling home brew (hopped malt extract) will only darken the brew and drive off hop aroma. However, if you are following a specific recipe and using additional hops, you may like to boil some of the malt …

My Cooper home brews have a great head and lace after just 1 week in bottles (well under the conditioning time for a home brew so it goes to show it does happen).
But lets be honest, even craig will tell you its not the head, it not he lacing, its how much you enjoy your own home made beer. Its that simple.

@1979timdog Well, TSA has done his share of bashing, but he has a more sarcastic way of doing it. Nige is just an abusive ass. It’s a side show. I don’t pay attention to it. I did make a video about TSA, but I am waiting for the right moment to post it. I don’t like posting crap on my channel, but the guy needs to be exposed.

Bring on the kegging videos, I can’t wait…I will be building a keezer soon to hold 3 corny kegs and will be closely listening to your advice Craig. Don’t worry about that other guy that likes to stir the pot, he isn’t worth it, keep helping people and you will go far.
Having watched many taste tests, I enjoy the educational process represented. I’d like to see some blind “group panel” taste tests. Perhaps you can get a group of brewed beverage enthusiats together for a sampling session. Maybe you and TSA could co-chair a taste test panel. Keep up the good work!

I think people would love to see a video of that – you can still do it in an apartment but you can start developing your own styles. If I send you one of my recipes maybe you could do a video and try it o

@supercheekykiwi I don’t like doing a secondary when bottling. You need some of that haze (yeast) to ferment in the bottles. I believe that doing a secondary is great for kegging. Bottling cloudy beer will give you more sediment in the bottles, but it’s old school to be afraid of sediment, and perfectly clear beer is not necessary. Personally, I don’t like bottling clear beer. It will clear in the bottles in about a week, trust me.
thanks so much for explaining the secondary fermenter thing to us. i’ve been very curious about it and how it would effect the carbonating.
So if you wanted to have a clear beer would you add finings to the primary fermenter a couple of days before bottling? would doing that have the same effect as secondary? ie take longer to carbonate.

Best way to chill a glass/mug: take a clean glass with no soap residue or hard water spots, place a small amount of water inside, swirl until all surface area within is wet, put the excess down the drain, then pop your drinking vessel into the cold icebox for two or slightly more minutes. Remove for a lovely frosted vessel.

oh come on he just meant its lighter which more women seem to like. There are differences in men and women in case you didnt know. my wife likes a lighter drink than me also . If you ever go to a bar im sure youll notice more men drinking beer and rum and more women drinking coolers and light liqours and stuff. gimme a break.

Well, it’s something I’ve never done, so I can’t testify as to how well it works. I would predict that if nothing else it would produce a beer with an awesome head.
You should see if you can find a product called Munton’s Beer Kit enhancer. It is only $6.99, and it contains about 500g of light dry malt, 500g of dextrose and, I’ve been told, a small amount of wheat malt to aid in head retention. $9 for 500g of dry malt is overpriced.
hey craig,,u recomend a few different types of sugar or sucrose based syrups for brewing(corn syrup,honey,corn sugar) but have you ever used or can you use mollases or treacle for brewing,i didnt want to waste a kit trying this without consulting the master,,,my guess is treacle will give very dark colour and unusual flavour but thats just a guess,,if it does work could you do a vid using this type of sugar

I was wondering if you have ever used corn syrup as your fermentable. I was thinking about using karo light corn syrup. I can get 3 16 oz. bottles for under 5 $. alot cheaper than DME. But, would it give it a cidery taste? or would it even be worth the savings? I would probably be using it with a coopers lager or Muntons american light. Thanks…

Regarding the single-stage vs two-stage debate – I usually don’t bother putting my ales into a secondary, but I do with my lagers. Lagers are generally a more clear beer and this helps a lot. Unless youleave them in too long, there’ll still be plenty of little yeasties in there to help carbonate the beer. I think temperature has more to do with that anyway. Your home brew will clear on it’s own after sitting for a few weeks.
Complaints? Well I guess you can’t please everyone all of the time. That’s life. But I and many others have taken a little or a lot from your vids so I say thank you. As i always say “If you like it….drink it”
Glass shape has some impact on head retention. High Ball style glasses are not the best. Good trick to get any glass to keep a head is to get a small piece of sand paper and tape it to the top of a pencil or anything thats long enough to go into your glass. Then right at the bottom of the glass, scratch the surface gentle a bit. works a treat!
hey craig…i had coopers draught for my first batch…is it a normally “darker ” beer?, or do i need a clarifier? what do you suggest for “clearing “a beer? cheers craig
