    My father inlaw use to make wine years ago & he use to make GRAPPA also which would taste like pure alcohol but nice AH the good old days, rest his soul

    suwa0015-this is the winemaker speaking.You said you made Dandelion Wine,then you mentioned oranges.Oranges contain citric acid and depending on what you did,it is possible to add to much acid to the must..The best way to clear the wine is with the use of Bentonite powder-this will clear the wine.vallo38

    Winemaker, I recently made dandelion wine from a recipe my grandmother had and it had me leave the rind on the oranges, but now that is the overwhelming taste in the wine. Would adding tannin help to remove some of this taste? Also my wine is not clearing up at all, is there anything I can do or add to help this process? Thanks!

    All you need is one packet of winemakers yeast
    for one to five gallons of winemaking.

    Mr. Winemaker how much yeast should you use to makke a good wine? I think I may be ussing too much yeast it usually ends up pretty cloudy.

    pinkfloydgr70s-This is the winemaker-Just
    add 5ounces of sugar per i/2 gallon on store
    grapejuice or 10 ounces per gallon and you
    should get 12 % alcohol.vallo3838

    Thanks winemaker for your answer. I just have one more question. If i add less sugar to make a dryer wine, how do you get the alcholol to be around 12%?

    pinkfloydgr70s-This is the winemaker-The
    answer is this.When making Dry wine you are
    looking for a lower sugar content in the
    grapejuice.Store Grapejuice contains a very
    low sugar content and that will produce a
    dry wine.But we always add sugar to the juice
    so as to produce a stronger alcohol.Just use
    less sugar and you will ferment dry wine.

    This is the winemaker-i forgot to say-will
    not tolerate alcohol level above 8 percent.
    Do not use bread yeast.

    This is the winemaker-people keep asking me
    if they can use bread yeast to make the wine.
    My answer is no-because it will not tolerate
    alcohol level 8 percent and this is not a
    healthy wine to keep for any period of time.
    Purchase wine yeast.vallo3838

    Talk to the winemaker on everything that
    pertains to winemaking,such as pectin enzyme,
    potassium metabisulfite,potassium sorbate,
    campden tablets,bentonite,and the proper
    time to use any of the above mentioned.
    Many of these products are used at the wrong
    time in the winemaking procedure.Ask and it
    the knowledge that i have will beshared.

    of making and fortification and degassing
    wine plus decoding of wine kits.Any question

    Good job. The way I know it the gesho they use in ethiopia is mostly the leaf . I am amazed you were able to make tej using only gesho branches(stem).
